Butternut Squash Pita Pocket

Butternut Squash Apple with Homemade Hummus Pita Pocket. Make the Butternut dish as a side dish the night before and then serve in your lunch the next day!

Butternut Squash Sandwhich

Ingredients:

1 Small Butternut Squash

2 Apples

1/2 C of Chopped Cilantro

1 Tbsp of Black Mustard Seeds

2 Tbsp of Sesame Seed Oil

1/2 Inch chunk of Ginger

1/2 tsp Tumeric powder

1 tsp of Sea Salt

 

Directions:

Place oil in a pan and turn on to medium, once oil is hot add Ginger, Tumeric and Mustard Seeds let sizzle for 2 minutes and stir in Cubed Butternut Squash. Add 1 cup of water and Apples and Salt, cook on medium stirring until softened. Add small amounts of water as need to keep Squash from sticking to the bottom.

Once soft but not too soft turn off heat and add chopped Cilantro.

Serve hot or cold 🙂
